I made pancakes. And they were good.
I love the gluten-free pancake mix from Bob’s Red Mill. Their recipe calls for milk, and I usually substitute almond milk. I was out of almond milk, so I used Bulgarian plain yogurt instead, and a little honey to compensate for the bitterness. The recipe calls for two eggs; I only had one egg, so I added a little baking soda.
And they were good!
